Beer.Beef.Chili.

BEER_BEEF_CHILI

 

Ingredients

  • 1 medium red onion chopped
  • 1  small chopped red bell pepper
  • 8  ounces  lean ground beef
  • 2  garlic cloves, minced
  • 1 1/2  tablespoons chili powder
  • 2  teaspoons cumin
  • 1  teaspoon sugar
  • 1/2  teaspoon salt
  • 1/2  teaspoon oregano
  • 2 ¼ cup red kidney beans
  • 1 ¾ diced tomatoes
  • 1 ¾ low-sodium beef broth
  • 1 bottle beer
  • 1  tablespoon yellow cornmeal
  • 1  tablespoon fresh lime juice

Preparation

Combine red onion, red pepper, ground beef, and garlic in a large Dutch oven over medium-high heat. Cook about five minutes, until beef is browned, stir to break meat apart. Add chili powder, cumin, sugar, and salt, simmer for 1 minute. Add oregano, kidney beans, tomatoes, beef broth and beer; bring to a boil. Reduce heat, and simmer for 15 minutes. Stir in cornmeal; simmer 5 minutes. Add lime juice and serve.
