Scrumptious Spinach with Pleasant Peanut Sauce
I dig Spinach and I love peanut butter. Mix them together and you can have the best of both worlds. It’s a very spicy dish if you end up adding a large amount of cayenne, so make sure the cover to the shaker is on tight! This recipes makes a lot, so feel free to cut it in half…or eighths, which I did for these photos.
Ingredients
- 2 tbsp canola oil
- 3 medium onions
- 1 medium red bell pepper
- 1-1/2 cups vegetable stock
- 1/2 cup homemade peanut butter
- 2 tbsp cider vinegar
- 1 tsp sea salt
- Cayenne pepper
- 2 pounds spinach
Preparation
Heat oil in a 5-quart Dutch oven (or soup kettle) at medium heat. Thinly slice the onions, seed and chop the red bell pepper and add to Dutch oven. Cook about 5 minutes till onions are soft. Add stock and bring to boil. Mix in the vinegar, peanut butter, cayenne and salt.
Wash the spinach, remove stems and chop finely then stir in and cook until spinach wilts, generally 5 minutes.
Best consumed immediately with a good friend.
